Black Bean Bowls
I have been trying to make an effort to make more yummy plant based meals & recipes lately & this black bean bowl I made last night was DELICIOUS! It is so easy to make, and even easier to make LOTS so you can have leftovers for lunches and dinners for at least another day, two or three!
The Ingredients
3 cups black beans(dry) or for quicker prep use canned pre-cooked black beans
3 cups rice
3 cups chopped lettuce (more for additional meals)
1 cup chopped tomatoes
1 can corn kernels
1 avocado
Salsa
Hot Sauce
Instructions
Soak black beans overnight covered in water
Put black beans in a medium sized pot & cover with water, bring to a boil. Reduce heat & simmer covered on low for 35-45 minutes. Stir Occasionally
Add 2 cups rice to 4 cups water. Bring to a boil. Reduce heat and simmer, covered, on low for 20-30 minutes depending on specific rice instructions or until water is absorbed.
Chop lettuce, avocado and Tomatoes
Once black beans & rice is cooked, portion about 1/2 -1 cup of each on a plate. Add 2 heaping tbsp corn. Mix and allow to cool slightly. Add lettuce, tomatoes and avocado. Mix it up. Top with hot sauce & some salsa. Mix it up again!

I have TONS of black beans & rice left which will allow me to make a few lunches for myself & Daniel over the next few days! It is so easy to throw together for a quick lunch once the rice & black beans are cooked too! If I don't eat up all the black beans, I may try and make a black bean brownie recipe later this week!
For leftover black bean bowls:
Add 1/2 cup rice, 1/2 cup black beans, 2 tbsp corn to 2-3 cups lettuce. Add 1/4-1/2 avocado & a few chopped baby tomatoes. Add 1-2 tbsp salsa & mix up. Add hot sauce if you wish !
