Pumpkin Pie Oatmeal
IT’S PUMPKIN SEASON!!! I have been WAITING for fall to start since like early August, & started getting the itch to make pumpkin everything by about August 30th! So YES it’s early in the season but I have already been drinking allll the pumpkin spice lattes (no whip, half sweet with almond milk) & experimenting with pumpkin in the kitchen!
So yesterday I posted the pumpkin pie oatmeal I made for breakfast & shared a poll on my instagram stories asking if you guys wanted my recipe… a whopping 900 of you said yes! WOW. & I even had some of you direct messaging me asking me to get it up, like yesterday, so I woke up first thing & wanted to get it up on the blog for you all!!
I made a bigger batch so there would be leftovers, & I added the sugar & nuts on top (last) so that Daxton could eat the oatmeal also! Which he also loved by the way - so definitely encourage your kids to try(add the sugar & nuts if they’re older, makes it WAY better). ANYWAYS-the recipe.
The Recipe:
Ingredients:
2 cups large flake oats
1 cup pumpkin puree(canned is fine)
1/2 tsp all spice
1 tsp cinnamon
1 tsp vanilla extract
1 cup unsweetened almond milk
1 1/4 cup water
Topping
1 tbsp brown sugar per serving
1 handful pecans(crush or break up in hands before adding on top)
More cashew/almond milk to add more creaminess & make desired consistency
Instructions:
Add 2 cups large flake oats to a medium sized pot
Stir in 1 cup almond milk & 1 1/4 cup water until well combined.
Turn on to medium heat. Add a lid & let sit for 1-2 mins.
Add cinnamon, all spice, & vanilla. Stir, put the lid back on, stirring occasionally until it almost comes to a boil.
Add pumpkin puree & stir until well combined. Lower heat to medium/low heat.
Continue stirring occasionally while allowing to boil for about 10 minutes.
Done! Fill up a bowl & top with brown sugar & pecans. Add desired amount of almond/cashew milk.

**For Daxton(9 months old) I added a small scoop to a little bowl, & added a bit more milk to make it a little bit runnier! He loved it.
